If you can tolerate gluten/wheat and have about 4 carbs available in your day….there are some great ideas for low carb tortillas. I prefer Mission Carb Balance tortilla, but there are quite a few options out there.
Not everyone feels these are keto, but if you accept them in your meal plan…they are a wonderful ingredient. Some, if not all of these ideas could be possible with gluten free or home made tortillas as well.
Lunch wraps – Fill a tortilla with all your favorite sandwich fixings…. deli meat, sliced cheese, veggies sprouts, avocados and so on. If you are making these ahead of time for a hike, ATV’ing or camping… I suggest a layer of cream cheese on the tortilla or add your cheese first and then fill it, this will keep the tortilla from getting soggy.
Tacos – Now this is obvious, since this is what tortillas are meant for. Gringo tacos, chicken tacos, fish tacos, pulled pork tacos, carne asada tacos….the possibilities are endless. I fill mine nice and full so one is all I need.
Burritos/Enchiladas etc… Use them to make your favorite burritos, enchiladas, crunch wraps and so on. I suggest filling them more than you normally would. Use lower carb sauces and fillings… When planned out, you can make a wonderful Mexican meal and keep it lower carb.
Breakfast tacos/burritos – Fill your tortillas with eggs, cheese, bacon, sausage, veggies and anything else you like. Wrap them up, roll them up and you can ever fry them up for that crispy shell.
Bagel roll ups – Smear tortilla with cream cheese, sprinkle with Everything But The Bagel seasoning, roll up tightly and fry in butter until golden brown.
Tortilla chips – Cut into strips and fry or bake until crispy. Season with simple salt or sweetener & cinnamon for a dessert. Spice them up wit a taco blend or add a little parmesan. You can even use cheesy popcorn flavor to make a dorito style chip. Make the into nachos, eat with your favorite dips or just enjoy a crunchy snack.
Burger “bun” – Instead of a lettuce wrap, I love to wrap my burgers in a tortilla. I prefer the taste and texture to a big pile of lettuce and it helps keep all the juices from running down your arm, I even take them to restaurants and put my bunless burgers in them. I have even wrapped hot dogs and brats in them.
Pizza – Fry a tortilla until crisp, top with a little sauce, cheese and all your favorite pizza toppings. Heat until cheese is melty and cut into quarters. Perfect personal pizza.
Pizza roll up – Smear a thin layer of cream cheese, add a little cheese and some pepperoni, some garlic and seasonings and roll up tightly and fry in butter until golden brown. Dip in a low carb pizza sauce or marinara.
There are tons of ideas for desserts. Tortillas can be filled with so many things, you will never be bored with them.
Cinnamon roll ups – Smear tortilla with cream cheese, sprinkle with sweetener and cinnamon, roll up tightly and fry in butter until golden brown.
S’mores – Toast to crispy on the grill or campfire grate, add a couple squares of your favorite sugar free chocolate (I like Lily’s) and as it starts to melt add a couple sugar free marshmallows, I suggest Max Mallows (but they can’t be roasted over an open flame) …as everything gets warm and melty, fold it up and enjoy. You could do this at home in a skillet if you wanted.
Toasted strudel – Smear tortilla with sweetened cream cheese, and put it in a skillet with butter, fry until crisp and add fruit or jam of choice. Fold in half and cut into half or quarters.
The possibilities are endless, fold them, roll them, cut them, fry them, bake them….fill them with sweets, savories, anything you want. It’s simple, it’s a single serving, it’s quick….it will be enjoyed by keto and non-keto alike.
There are recipes out there for using them as noodles, or layering them in casseroles and non-keto friends and family won’t think you are feeding them something weird.
