Mini Vanilla Cake (Lupin Flour)

This recipe is super versatile. Oven or microwave, add in anything you want to change it up. Change it to any flavor or top it with whatever your hearts desire. This can be dessert or even breakfast, one or 2 servings depending on what you want.

3 net carbs for the whole recipe (not including add ins or topping) and 23 g of protein, 35 g fats.

Mini Vanilla Cake

Ingredients

  • 2 tbsp butter
  • 1 egg, beaten
  • 2 tbsp lupin flour
  • 1½ tbsp almond flour
  • 1 tbsp whey protein
  • 2-3 tsp sweetener
  • pinch of salt
  • ⅛ tsp baking powder
  • ½ tsp vanilla or cake batter extract or 1 tbsp SF flavor syrup (like Torani)

Optional:

  • Berries (diced and sweetened if needed)
  • Chocolate chips
  • Grain free granola as a crumb topping

Instructions for Oven Baked Cake

  1. Preheat oven to 350
  2. Grease small pan, ramekin or donut mold
  3. Beat egg & add everything (including melted butter)
  4. Mix or blend well (I like my electric whisk)
  5. Pour batter in cooking vessel
  6. Bake for 17-20 minutes depending on size of pan
  7. Allow to cool for 5 minutes and flip onto plate, top as desired.

Instructions for Mug Cake

  1. Melt butter in dish your going to cook in
  2. Beat egg & add everything (including melted butter)
  3. Mix or blend well (I like my electric whisk)
  4. Pour batter in mug, ramekin or bowl
  5. Microwave for 60-80 seconds
  6. Allow to cool for 2 minutes and flip onto plate, top with whipped cream or frosting of choice if desired.

Instructions for Strawberry Upside Down Cake

  1. Melt butter in dish your going to cook in
  2. Beat egg & add everything but the strawberries (including melted butter)
  3. Mix or blend well (I like my electric whisk)
  4. Put cut strawberries in bottom of the dish you used for butter
  5. Pour batter over the top, spread flat
  6. Microwave for 60-80 seconds
  7. Allow to cool for 2 minutes and flip onto plate, top with whipped cream if desired.
