I have decided I love the texture of lupin flour and have been working on new recipes to include it. I have also decided I would like some smaller recipes for baked goods…no more than 2 days worth. Keto baked goods tend to lose some yum factor as they age, even with lupin flour. This is my first mini recipe and it offers a few different cooking vessels.

Mini Chocolate Cakes (Lupin Flour)
Ingredients
- 3 tbsp butter
- 1/4 cup lupin flour (fine ground)
- 2 tbsp cocoa powder
- 3 tbsp sweetener (+/- to taste)
- 1/2 tsp baking powder
- 1 egg, beaten
- 2 tbsp heavy cream (or milk sub of choice)
- 2 tbsp chocolate chips
- 2 tbsp nuts of choice (optional)
Steps
- Preheat oven to 350
- Melt butter in small bowl, cool for a minute or so
- Add heavy cream, stir
- Add in beaten egg and whisk well
- Stir in all dry ingredients (except chocolate chips and nuts)
- Add chocolate chips and nuts, give a quick stir (or save to use as topping)
- Pour into 2 or 3 greased ramekins or 2 or 3 greased wells of a whoopie pie pan
- Bake for 12 minutes for 3 or 15 minutes for 2, done when toothpick comes out clean. This can also be microwaved for about 60-90 seconds (Texture will not be the same)
- Allow to cool 5 minute before removing from pan

Notes
- I think a muffin pan would work too, probably 3 or 4 muffins, probably about 17 minutes

Lupin flour is my favorite. I’ll give your pancake recipe a try. I’ve been making Lupin Flour Bread from Samyah on her I Don’t Sugar Coat YouTube video. It’s probably the closest keto bread I’ve came across so far.
