Chia seeds are amazingly healthy for you, they are also very filling, so they make an easy, hearty ready to go breakfast. Since they take on the flavors they are soaked in, they can easily be made sweet and creamy for a dessert.
If you have chia seeds in your cupboard…you can always make a great dessert or simple breakfast.

The basic ratio for the mixture is …
3-4 Tablespoons Chia Seeds to 1 Cup of liquid – depending on desired thickness
The liquid can be any combination of the following…
- Almond Milk
- Coconut Milk (The drinkable kind and the canned thick stuff too)
- Macadamia Milk
- Protein Shake(prepared)
- Heavy Whipping Cream
- Fa!rlife Milk
- If you use coffee, water, or tea…I would suggest a 50/50 mix with a creamy liquid.
You can add things at this point for flavor…or add them to pudding before eating.
- Protein Powder(for flavor or for added protein)
- Mashed or Whole Berries
- SF Jelly
- SF Syrups and Extracts
- SF Jello Powder
- Coconut Butter
- Peanut butter
- Cocoa Powder
- Pumpkin Puree
- Cinnamon(other spices)
After you get your pudding the way you want, refrigerate for at least 30 minutes and can be kept in the refrigerator for up to 5 days. I suggest stirring after 10 minutes and again after 30 or the seeds will solidify on the bottom.
Top with berries, whipped cream, nuts, coconut…anything you want.
A couple tablespoons of cottage cheese in the mix adds a little protein and makes it even better.
Oikos Triple 0 yogurt is great too, 1 container divided into 4 or 5 serving adds amazing flavors that are otherwise difficult to achieve. This really thickens the pudding up too.
For example – 1 container of orange cream yogurt, 1 cup of macadamia milk, 5 TBSP of chia seeds and a little heavy cream to thin it. I also added a little squirt of Mio Orange Cream drink enhancer.
Or use SF Jello Powder – My strawberry is 2 cups of milk (of choice). 7 Tbsp of chia seeds, SF strawberry jello powder (mix well or it clumps funny) and sweetener to taste. Mix well, refrigerate, for 10 minutes and mix well again(the seeds settle to the bottom and solidify) This is 5 or 6 servings for me and I slice up a strawberry or 2 in each serving.
