I love chicken chili and had to change up my old non-keto recipe to keep up with my way of eating. I looked up a bunch of recipes and combined them to make my new favorite chili recipe. There are lots of options depending on how fast or slow you want your dinner done. You can change up the seasonings and spices to your liking too.
Chicken Chili
Ingredients:
- 1½ pounds chicken breast
- 1 small onion, chopped
- 8 oz cream cheese (melting or softening can make it easier to incorporate)
- 1-2 cloves of minced garlic
- ½ teaspoon cumin
- 2 teaspoons salt
- 24 ounces chicken broth
- ½ teaspoon chili powder
- ½ smoked paprika
- ½ teaspoon pepper
- 1 can (10 oz) diced tomatoes with onion and garlic
- 1 can (4.5 oz) Green Chiles
- handful of cilantro
**Garnishes**
- Shredded cheese
- Avocado
- Sour Cream
INSTRUCTIONS:
**Pressure Cooker-Instant Pot**
- Place chicken into the pressure cooker. (frozen ok)
- Add all other ingredients except cream cheese and anything that is for garnish.
- Cook at high pressure for 15 minutes then NPR 15 minutes.
- Remove lid and carefully remove chicken.
- Add cream cheese to liquid (with lid) to melt while shredding chicken re-add chicken to pot and stir all ingredients together.
**Crock Pot**
- Place chicken into the crock pot. (frozen ok)
- Add all other ingredients except cream cheese and anything that is for garnish.
- Cook at high for 6 hours or low for 8.
- Remove lid and carefully remove chicken.
- Add cream cheese to liquid (with lid) to melt while shredding chicken re-add chicken to pot and stir all ingredients together.
**Stove Top**
- Place cooked chicken (diced or shredded) in large pot. Rotisserie chicken works well.
- Add all other ingredients except cream cheese and anything that is for garnish.
- Heat until hot and near boiling.
- Lower temp to a simmer.
- Add cream cheese to pot and stir until creamy and there are no cream cheese chunks, simmer until hot.
**ALL COOKING METHODS**
- Add cilantro. Add heavy cream to thin, and grated parmesan to thicken.
- Serve with any of the garnishes or any of your favorites.
